Original ghee is prepared by simmering in a heavy saucepan unsalted butter that has been previously melted over low heat. After a few minutes of slow boiling, the solid fatty substances are separated from the liquid fat in the form of a yellowish foam accompanied by whitish particles composed of casein, whey and other impurities of the butter that must be gradually removed. by means of a small colander or a simple spoon. When all these impurities *are* removed and the remaining melted butter *is* filtered, a beautiful golden color is obtained, the “ghee”. While cooling, this liquid becomes semi-solid. Vegetable Ghee Yemma is the perfect substitute for the original Ghee, same color, same smell and even taste.
